Our 3 Favorite Oyster Sauces

Ingredients
Mignonette Sauce
  • 1 Tbsp shallot, finely chopped
  • 1 Tbsp serrano pepper, finely chopped
  • ¼ cup red wine vinegar
  • ¼ cup water
  • ¼ cup sugar
  • Salt and pepper to taste
Citrus Vodka Sauce
  • 2 oz vodka
  • 1 orange, juiced and half zested
  • ½ lemon, juiced and zested
  • 1 lime, juiced and zested
  • 1 green onion, thinly sliced
  • Salt and pepper to taste
Tangy Cilantro Pepper sauce
  • ¼ serrano pepper, seeds removed and diced
  • 2 Tbsp fresh cilantro, chopped
  • 1 orange, juiced
  • 1 lemon, juiced
  • 1 tsp sugar
  • Salt and pepper to taste
Instructions
  1. Stir all ingredients together and let stand for at least 10 and up to 60 minutes before serving.
