Creamy avocado and white beans pair perfectly with zesty sun-dried tomatoes atop our cheesy, garlicky focaccia bread for this crowd-pleasing sandwich. This recipe makes four good-sized sandwiches so it’s great for a quick family dinner—just add your favorite Haggen Deli salad on the side.
Avocado White Bean Focaccia Sandwich

Ingredients
- 2 medium, ripe avocados
- 1 (15 oz) can white beans, rinsed and drained
- 2 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 clove garlic, minced
- ¼ teaspoon fresh thyme
- ¼ teaspoon pepper
- 1 loaf Haggen garlic mozzarella focaccia
- ½ cup sundried tomatoes, chopped
- 8 slices Haggen deli cheddar cheese
- 3 cups baby lettuce
Instructions
- Mash the avocados, beans, lemon juice, oil, garlic thyme and pepper with a fork. You can also use a food processor to combine, but leave the mixture with good chunks of avocado and bean.
- Cut the focaccia bread and lay both sides open-face.
- Spread avocado bean mixture on one side.
- Add cheddar slices.
- Sprinkle sundried tomatoes and lettuce.
- Cut into 4 pieces and enjoy!
