Spring Farro Salad

Serves: 4
Ingredients
- 2 cups cooked farro
- ½ cup asparagus, cut thin on an angle
- ½ cup snap peas, cut thin on an angle
- ¼ cup mint, chiffonade
- 3 Tbsp white balsamic vinegar
- 1 Tbsp shallot, minced
- 3 Tbsp canola oil
- Salt and pepper to taste
- 2 oz feta
Instructions
- Combine all ingredients except Feta in a bowl and toss gently. Sprinkle feta on top and serve.
