Every autumn, the Northwest holds its collective breath in anticipation of the arrival of the first crop of Honeycrisp apples! These reddish-pinkish-yellowish beauties win over hearts from the first bite, creating legions of fans across the country. The crisp, fragrant flesh is more sweet than tart, making it a reliable lunch box treat, a champ in baked goods, and a pleasant surprise in a salad. But our favorite application is perfectly paired with some of our favorite artisan cheeses (clockwise from top left):
