Fresh Fruit Spring Rolls

Ingredients
Fruit Spring Rolls
- 1 package rice paper wrappers
- Assorted fruits and herbs, cut into small slices or matchsticks, (Ex. Granny Smith apples, kiwi, strawberries, mango, melon, pineapple, avocado, basil)
- Black sesame seeds
Yogurt Dipping Sauce
- 2 c plain yogurt
- 1½ Tbsp honey
- 1 tsp cinnamon
- Black sesame seeds for garnish
Peanut Dipping Sauce
- 2 garlic cloves, minced
- 1 Tbsp ginger, peeled and finely chopped
- 2 Tbsp tamari
- 2 Tbsp maple syrup
- 2 Tbsp lime juice
- Chili powder, to taste (optional)
- ⅓ cup peanut butter
- ⅓ cup water
Instructions
Spring Rolls
- Pour enough hot water in a plate to soak the rice paper wrapper. Place one wrapper into the water for approximately 10 seconds.
- Place the wet, pliable wrapper on another plate or cutting board. Add fruit and herbs of your choice to the center of the wrapper. Roll one side of the wrapper over top of the fruit, then fold in the corners. Continue to roll until ingredients are tightly contained. Enjoy mixing and matching ingredients until all fruit or rice paper wrappers have been used. Dip in either sauce and enjoy!
Yogurt Dipping Sauce
- Mix all ingredients until combined.
Peanut Dipping Sauce
- Mix all ingredients until combined. Blend ingredients if a smoother consistency is preferred. Add additional water until desired thickness is achieved.
