Chipotle & Maple Roasted Sweet Potatoes
  • 5 lb sweet potatoes, peeled and cubed
  • 1 Tbsp canola or vegetable oil
  • 2 tsp kosher salt
  • ¼ tsp black pepper
  • 1 cup heavy cream
  • 4 oz unsalted butter
  • 1 Tbsp chipotles in adobo sauce
  • ¼ cup maple syrup
  1. Toss sweet potatoes with oil, salt and pepper then spread onto a baking tray in a single layer. Roast at 350°F for 20-30 minutes or until soft.
  2. In a small pot, melt butter with cream. Place sweet potatoes in a mixer with paddle attachment or mash by hand with the back of a spoon. Add the cream, butter, chipotles and maple syrup. Mix well and adjust seasoning.
