Roasted Corn & Pepper Dip

  • 1 Tbsp olive oil
  • 2 cups frozen corn
  • 4 chile peppers, chopped
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp cumin
  • Salt and pepper to taste
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup Parmesan cheese, shredded
  • ½ cup Monterey Jack cheese, shredded
  • Fresh cilantro, chopped
  1. Preheat oven to 400°F.
  2. Heat olive oil in a cast iron skillet over medium heat. Add the corn and peppers, stirring occasionally until golden brown.
  3. Remove skillet from heat and stir in the rest of the ingredients. Bake until golden brown. Garnish with cilantro and serve with your favorite chips.
