Chicken Skewer Greek Gryos
Serves: 2
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 cucumber, seeded, finely grated and drained
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice
  • 2 Tbsp fresh dill, chopped
  • Salt & pepper to taste
  • Parchment paper
  • 2 pita breads
  • Tzatziki Sauce
  • Roma tomato, sliced
  • Cucumber, sliced
  • Red onion, sliced
  • Chicken skewer from our Butcher Shop, grilled or baked
  • Kalamata olives, sliced
Tzatziki Sauce
  1. Combine all ingredients in medium bowl. Cover and chill in refrigerator while preparing the gyros.
  1. Place a 6x6" piece of parchment paper on the work surface. Lay warmed pita bread on top partially poking out above edge of parchment paper. Layer with Tzatziki sauce, tomatoes, cucumbers, red onion, chicken skewer meat pulled off of the skewer and Kalamata olives. Wrap parchment paper around gyro and secure bottom by twisting excess parchment paper. Enjoy!
