Salmon Cakes

Ingredients
  • 1 lb cooked salmon, cold
  • 8 oz Yukon gold potatoes, boiled until tender
  • ½ red pepper, minced
  • 1 celery rib, minced
  • 3 green onions, thinly sliced
  • ¼ cup mayo
  • 1 Tbsp dijon mustard
  • 2 tsp Old Bay seasoning
  • 1 cup Panko bread crumbs
  • Tabasco sauce to taste
  • ¼ tsp pepper
  • 1 cup flour
  • 1 Tbsp olive oil
  • 1 Tbsp butter
Instructions
  1. Rough chop salmon and potato (while potato is still warm).
  2. Combine all ingredients expect flour, oil and butter and mix. Shape into 24 1" thick cakes.
  3. Dip each salmon cake into flour and shake off excess.
  4. In cast iron pan, heat oil and butter over medium high heat. Add salmon cakes to pan in batches and brown on each side.
