Spring Farro Salad

Ingredients
  • 2 cups cooked farro
  • ½ cup asparagus, cut thin on an angle
  • ½ cup snap peas, cut thin on an angle
  • ¼ cup mint, chiffonade
  • 3 Tbsp white balsamic vinegar
  • 1 Tbsp shallot, minced
  • 3 Tbsp canola oil
  • Salt and pepper to taste
  • 2 oz feta
Instructions
  1. Combine all ingredients except Feta in a bowl and toss gently. Sprinkle feta on top and serve.
