Cranberry Relish 3 Ways

Cranberry Ginger Relish

  • 12 oz bag fresh cranberries
  • ¾ cup orange juice
  • ¾ cup sugar
  • 1Tbsp grated orange peel
  • 1 tsp fresh ginger, ground
  • ½ cup crystallized ginger, minced

Combine cranberries, orange juice, sugar, orange zest and ginger in large saucepan. Stir over medium-high heat until sugar dissolves. Bring to a boil. Reduce heat to medium; cook for about 30 minutes until cranberries pop and sauce thickens. Stir in crystalized ginger and cook 1 minute longer. Cover and chill.

Cranberry Pomegranate Relish

  • 12 oz bag fresh cranberries
  • ¾ cup pomegranate juice
  • ¾ cup sugar
  • Lemon, juiced and zested
  • Kosher salt, pinch
  • Ground cloves, pinch
  • ½ cup pomegranate seeds

Combine cranberries, pomegranate juice, sugar, lemon juice and zest in large saucepan. Stir over medium-high heat until sugar dissolves. Add salt and cloves and bring to boil. Reduce heat to medium; cook for about 30 minutes until cranberries pop and sauce thickens. Stir in pomegranate seeds and cook 2 minutes longer. Cover and chill.

Sweet Orange Cranberry Relish

  • 12  oz fresh cranberries
  • 1 orange zested and juiced
  • 1/2 cup sugar
  • Pinch of ground clove
  • 1/2 tsp yellow mustard seed
  • ¼ cup cranberry juice

Combine all ingredients in a medium-sized pot and bring to a simmer for 5 minutes, stirring occasionally. Cover and chill.
