Take the classic BLT sandwich but swap lettuce for tender, sautéed broccolini and add a creamy smear of whipped feta for a new take on an old favorite that is sure to impress the taste buds. If whipped feta sounds a little imitating, do not fear! This simple process requires four ingredients and a hand mixer (or a blender works fine, too) to create a dreamy, spreadable cheese that delivers all the savory, salty, tangy reasons we love feta.
"BBT" Bacon Broccolini Tomato with Whipped Feta on Garlic Ciabatta

Ingredients
- 1 loaf Haggen Bakery garlic ciabatta bread
- 2 tbsp olive oil
- 2 bunches (~8 oz) broccolini
- 1-2 large tomatoes, sliced into rounds
- ¼ cup bacon, cooked and crumbled
- Salt and pepper
- ½ cup heavy whipping cream
- ½ cup crumbled feta
- 2 tbsp shallot, minced
- ½ cup Balsamic reduction
Instructions
- Heat olive oil on medium-high heat in a large sauté pan until shiny. Add the broccolini spears and season with salt and pepper. Sauté until soft and slightly browned. Set aside on paper towel-lined plate.
- Add the heavy whipping cream, Feta, shallot and pepper to a medium bowl. Using a hand mixer, whip on low, then on high until well combined.
- Cut the ciabatta through and open both sides.
- Spread the whipped Feta mixture on one side of the ciabatta. Add tomatoes, broccolini, bacon and drizzle with Balsamic reduction. Close the sandwich, cut into 4 pieces and enjoy!
